Simple Paleo Chili

Nothing is better at warming you up and helping you feel cozy on a cold, snowy Wisconsin day like a hearty bowl of chili. My kids give this chili recipe 4 out of 5 thumbs up – which means it is pretty darn good!

For the ultimate comfort meal, serve the chili over baked sweet potatoes or mashed potatoes. If you aren’t eating gluten-free, it goes without saying that a slice of fresh baked bread would be an excellent chili-dipper!

Meat Options:

I personally struggle with low iron levels, so chevon (aka goat meat) has been my go-to protein lately. Pasture raised goat is higher in iron than beef and holds together very nicely in chili, soups, and stews. You can use any ground or cubed meat and still end up with an easy, delicious chili to warm your soul. If using as a slow cooker freezer meal, I suggest a more lean meat such as our grass-fed goat or lamb – ground chicken or turkey would be great options as well.

Planning for 2017

January on the farm is pretty quiet and generally allows us to take a small break and travel for a few days. This year, we gave the kids a train ride to Chicago for Christmas. It’s been four years since we have gone anywhere for more than a day with the whole crew. The seven of us on Amtrak train, city bus, and wandering the big city was quite an experience. We quickly learned which of us can’t handle large crowds, navigating public transportation, walking long city blocks, using a selfie stick, and riding escalators. I think we all would agree that the Baier family is better suited for our quieter life in Western Wisconsin versus the hustle & bustle of Chicago, but most of the trip was very enjoyable and it was revitalizing to be out of our element and experience new sights, sounds, and smells.

Of course, me being the planner I am, I brought farming books along for the train ride. January is one of the only months I actually have time to read, so I took full advantage of the hours of scheduled sitting and started working on some goals for the farm in 2017. We are planning to offer more of our current products: lamb, pork, chicken, and eggs. It is both a curse and a blessing that we sell out of these items so quickly! We are also going to be expanding our garden and offering vegetables and cut flowers right here on the farm – watch for more info to come out very soon regarding a CSA membership, Friday Farm Market, and U-pick opportunities to get some great deals on fresh, local produce! Speaking of watching for deals – be sure to sign up for our email newsletter and follow us on Facebook to keep current on all of the farm happenings & special offers. In addition to our 3rd annual Fall Festival and Pumpkin Patch coming up in September & October, we are going to offer a couple of other opportunities throughout the year for you to join us on the farm for some family fun and also offer workshops to learn more about homesteading, natural living, and decorating with nature.

Every January, I get very excited about all of the things I want to accomplish in the next year. One of the resolutions I always make is to get the blog going again. Savory Strawberry Shortcake

This is one of my favorite recipes to make during strawberry season. Since I like to freeze the sliced strawberries too, it is something my family can enjoy all year!

The shortcake is a more traditional and less sweet short cake that can be baked in a pan or dropped onto a cookie sheet to make individual cakes.

Wisconsin winters can do quite a number on my skin while it’s hidden under layers of clothes and wool socks. Exfoliation tends to cause my skin to break-out or itch, so it’s been a long journey to find the perfect product to use when spring rolls around… until I found sugar scrubs! A sugar scrub is a wonderful way to exfoliate and moisturize at the same time – add some essential oils and you’ve got a spa treatment.
